Monday night Yum - Scallop-arugula salad


On the menu tonight we had a gourmet main meal salad.





Scallops sautéed in copious amounts of butter, white wine, and lemon juice, spread over a salad of avocado, carrots, yellow bell peppers, red onions, and tomatoes, all piled on top of a massive heap of arugula. Drizzled some olive oil and balsamic vinegar,  then threw on some crumbled blue cheese, and we've got ourselves a dinner, boom!
